Monday 09-06-10 Labor day...

I have had a wonderful weekend with my eating, exercising and just relaxing.  I have stayed busy and clean my trailer, now I am packed and ready to go home by the way of Walmart.  I noticed when I went Saturday that they still have some watermelons so I am going by to get a couple.  The two that I picked up at the fruit stand were bad, they were to ripe and not good.   This will probably be the last I will be able to get so I am going to start trying some lite peaches and maybe some pineapple.  The pineapple sometimes burns my mouth though so I can not eat to much of it.  I can do apples or oranges once in awhile, but they are not my favorite. 

I hope everyone had a good weekend and a safe one.  This is a short post to get my food journal in for yesterday before I have to leave and go home.  I made a Weight Watchers receipe last night that was wonderful and the guys ate all of it.  I called in Mexican stew, because that what it look like when I got it all put together.  I cut up two sirlions, 1 can hominy, 1 can tomatoes & green chillis, 1 can whole kernal corn, 1 onion chopped fine, 1 red bell pepper.  You toss your meat with chilli powder, salt and cumin seeds.  You then brown this in 2 tbs of canola oil.  You put everything in a crock pot and let it cook for about 5 hours and serve it over brown rice.  I used the steam in a bag brown rice so it was easy.   The serving si 1-3/4cups and with a 1/2 cup of rice you are looking at 8-1/2 points.   I only took about  a cup though, because that was a lot of stew for me with the rice.  I had crackers for the guys, but I did not eat any.  Overall it was great..

Well I am headed home so I have to pack up the laptop..  Here is yesterday's food journal...

The recipe reads delicious, and best of all, easy to prepare. I don't like to cook so easy is a + for me :) I'm going to try it for sure.

Way to go for staying on track!

I'm not a very adventurous eater, so your recipe frightens me a bit. Too much flavor and too many things mixed together!

I think a lot of picky eaters such as myself grow up to be obese. These days, if offered some of your Mexican stew I'd try it but I'm still too picky to make it myself.
