Going Down Down Down

I am DOWN another 1.5 lbs.... I am down to 280 lbs and I am on a roll.  Walking seems to be my exercise that and my wii if my husband will get everything put up out of my exercise room so I can use it.  I may just move it back to the living room so he can not watch the TV when he wants to.   No more couch potato pictures for me.   I only lost 1/2 lb last week so I am so proud of this week.

I know I am walking at a turtles pace, but you have to crawl before you can jog.  I am hoping to work up to a fast walk in a couple of weeks though.  I think the most important thing is to just keep it up.  Its bad though when you are walking and a little 80 year old lady comes by you and says see you on the next lap.  Okay so I am slow... Well really slow....

Weight watchers online is working good for me, I am staying in my point range and getting plenty to eat.   I am trying new recipes and I had white chili last night for supper it was great.  It is made with chicken and has celery and velvetta in it.   I like it better than regular chili and it is not as fatting.  Here is the receipe for everyone.

1 can great northern beans
1 large can diced tomatos
1 can shoe peg corn
1 pack ranch dressing mix
1 can Jalapeno Beans.   I use black eye peas, but you can use whatever.
1 small box velvetta cubed
1 can roytel  regular.
1/2 cup celery
1 small onion chopped.
1 - 2 lbs chicken breast.

Boil your chicken and cube or shred it whichever you prefer.  I like mine cubed.  Add all the can products to the chicken broth and mix in the pack of ranch dressing mix and add the onions and celery.  Let this cook for about 30 min. and add your velvetta.  You will have to keep a watch on this because it will stick because of the cheese.    I serve this with tortilla chips.  I like it over the chips.

Well I am at work so I need to get back to the grind.  More later.
