Lunch today is another sandwich. This time it is homemade chicken salad with lite may and mustard. I put homemade dill pickle relish in it and it was wonderful. I had a small thing of peaches for a snack. 2 small slices of cheese. I really like this white wheat bread it is soft and stays fresh longer then whole wheat.
I serve this with bake tortilla chips, so I will have something crunchy to eat with them. I need something to give the chicken salad some color so any ideas anyone. Also I need some lunch ideas that I can brown bag and eat at my desk, so send me some ideas everyone. Here is my email address qslowe@aol.com.
Well let me go and catch up on some posts. I do not get to read them at home due to no high speed connection. That's Mississippi for you though, I can use my cell phone if I go outside and stand on one foot and lean off of the porch to my right. lol.

For chicken salad I use lite mayo, a squeeze of mustard, chopped onion and celery, and then throw in either raisins, craisins, or halved fresh red grapes. If you really want some good crunch in it add a few slivered almonds, too. It's the best! I love that white wheat bread, too.

Mmmm first steps. That sounds good. I usually throw in pickles, and even fresh sliced green peppers. I eat them with everything. Red too!

I hope you have a great birthday. My niece loves the white wheat bread, but if it doesn't say "whole wheat" I won't buy it. No wonder she never comes to visit. lol
Maybe I should compare labels and see how they stack up nutrionally.

Potato salad is great with chicken in a sandwich. Redcurrant or cranberry jelly works well too :)
Happy Birthday. Also for sandwiches you might want to try Sandwich thins or bagel thins. I love them and they are very low in calories and super tasty and stay fresh for a long time in the fridge.
